White Peony is the second chapter of the White Tea Trilogy<\/b>.<\/p>\n

It bridges the delicacy of Silver Needle<\/strong><\/em> and the richness of Shou Mei<\/strong><\/em>. Made from one Tender buds with one or two young leaves. it offers a more rounded body and richer aroma than Silver Needle, while still retaining the elegance of white tea. Lightly processed, it preserves the natural freshness and purity of the tea leaf.<\/p>\n

I always call White tea a tolerant tea<\/i>, because unlike green or other teas, it does not punish you with harsh bitterness when over-infused. With relatively low levels of catechins, it is far less astringent than green or oolong tea. A short steep brings a light and refreshing taste, while a longer infusion highlights floral and honeyed notes.
