White Peony is the second chapter of the White Tea Trilogy.
It bridges the delicacy of Silver Needle and the richness of Shou Mei. Made from one Tender buds with one or two young leaves. it offers a more rounded body and richer aroma than Silver Needle, while still retaining the elegance of white tea. Lightly processed, it preserves the natural freshness and purity of the tea leaf.
I always call White tea a tolerant tea, because unlike green or other teas, it does not punish you with harsh bitterness when over-infused. With relatively low levels of catechins, it is far less astringent than green or oolong tea. A short steep brings a light and refreshing taste, while a longer infusion highlights floral and honeyed notes. Of course, too little or too much steeping may affect its balance, but it will never taste unpleasant — making white tea the perfect choice for those who worry about brewing it wrong.
